This delicious and simple recipe will be your go to recipe for a whole variety of vegetables soups.
Pumking, Leeks, Mushrooms, Tomatoes, Carrots and even Broccoli.
You will need a stick blender to achieve the silky fluffy creamy soup.

It might sound crazy to have a creamy fluffy soup without adding cream.
But its the magic of the stick blender and its truly good this way.
We enjoy a lot of soups for lunches and mostly as a starter for dinners.
It hydrates us in these winter month and fills our stomach. With the always hungry teenagers in my house, this is an affordable and zero food waste hack to use up any of these vegetables left in your fridge draw.
Our favourites are zucchini for sure .
The creamy carrot soup is also an all time favourite . I always, always have some carrots in my house and as I love to cook my working pantry is well stocked with oils flour and seasonings.
I think that the latest after 2020 all of us are much more senisibilized to be sure to have some BASIC ingredients at home at all time.
Don't be shy to use frozen vegetables if that's all you have. I have done that too and it works like a charm as well with this method.
We are not gluten free and I can only assume that this recipe could work with as well with gluten free flour as well, I would try with oat flour.
By adding the flour the soup will thicken and give it its creamy base . Its a basic soup and does require a little of your attention as you don't want to have any of the vegetables browning but at the same time you want the vegetables to cook evenly. Stirring frequently your vegetables helps the flour to cook. It will get sticky on the bottom as the vegetables release their liquids.
this is also a great time to add any of your flavourings. Honestly Its very tasty just with salt and pepper. But sometimes we want a little more adventure on your plate so add your favourite herbs along here.
For example with the celeriac soup we add sage and mimic the "chicken Soup " flavour. I also love some orange zest with my carrot soup or some warming ginger. You get the idea, right ?

if you are on a weight loosing journey these kind of broth soups will be your best friends. They are filling and satisfying and in my house even snack time can be a quick bowl of soup . specially when its cold and wet and dark outside. Give it a try , no regrets here.
Zucchini cream soup recipe

Zucchini Cream Soup
Equipment
- 1 large soup pot with lid
Ingredients
- 600 gr of grated Zucchini
- 1 yellow onion chopped
- 1 glove of garlic , minced
- 2 Tablespoons of Vegetable Oil
- 2 Tablespoons of Flour whole wheat works fine as well
- Salt & pepper to taste
- 1 liter of water or broth if you prefer possibly more
Instructions
- Heat the oil in a large pan on a high to medium heat, add Zucchini, turn down the heat to medium and let them cook slowly .
- The Zucchini contains a lot of water and we want to intensify the flavor by letting all the moisture evaporate, be careful not to brow them, keep stirring!
- To accelerate the process, you can go ahead and add a little salt.
- After about 7 min, most of the moisture should have evaporated. Add onions and garlic, be sure to keep stirring for another 5 minutes until your onion has become all translucent and your garlic in fragnant.
- Add flour by dusting your vegetables in the pan. Stir well for another 5 minutes. Pour in the broth (or water), bring the pot back to the boil, stir well to fully dissolve your flour with your liquid.then turn down the heat to simmer for a good 10 minutes. You will see how the soup thickens (if the soup is too thick for you, just add more liquid to thin it out )
- After 10 minutes, turn off the heat and puree the soup with an immersion blender. Blend till you have reached a smooth and creamy consistency.
- Add salt and pepper to taste.
- at this stage you can let your soup cool and store until you serve it. once you ready continue as follow
- Return the Pot to the heat and bring to simmer once more.Just before serving, give the soup a little wiz again with the stick blender, this way you will incorporate a nice frothy and silky consistency. serve piping hot.
