where its comes from
This is definitely one of our best internationally known recipes. and yes it a "Swiss invention".
Dr. Max Bircher- Brenner was an well known and cristised Doctor in the beginning of last century.
He already then promoted an Whole Foods Nutrition with a large amount of raw fruits and vegetables to cure a numorous varieties of "Lifestyle diseases " at the time like rheumatism arthritis and stomach and gut pains.
so he lived in the beginning of indutrialism , so people were starting to live according to the clock. Working indoors in facories and in offices versus working the land and physical work .
Vitamins are part of a healthy Nutrition
He categorised our aliments in what he called the Sunlight Nutrition Value.
If you like he created the first nutrition pyramid with categorising what we need a lot of because its valuable for our health and other foods we can simply eliminate as they don't add any "energetic " value.
He was openly criticised and admired for his restless research and continuous adaptation of the treatment of his patients with the numerous studies that were done around the world applying his Diet recommendation for Healing.
The Clinic he founded here in Zürich in 1904 still exist today and is still committed to the approach of healing through good nutrition. What I also admire personally about Dr Brenner-Brenner that only 3 years after he opened his clinic he opened special beds only to receive patients that were not in a financial situation to receive the medical treatment that they needed.
Some researcher claim him to be the the idea father of the vitamin and minerals balance in our body.
Today everybody knows that a healthy supply of minerals and Vitamins are essential to our Health and well-being and are cause of many chronic diseases.
So everyone in Switzerland has its own recipe and swears by it.

Mine is definitely Vegan juste like in the beginning of his research Dr. Brenner-Bicher vividly self tested his Vegan and WHOLE Foods diet wich was what we call high Raw this days I believe.
The original recipe I could found is with lemon juice and condense milk.
The grated apple and oats are the same.
I replaced the lemon with orange juice and I completely omit the condensed milk as I can't find a vegan alternative.
But please add as much sweetener as you like, If you live in Switzerland you HAVE TO TRY BIRNELL !
Its the Marple sirup of Europe .
You take Pear juice and slowly simmer it down until you have a honey like consistency. It keeps forever and has no added sugar.
In Switzerland Birnel is also special as it helps to care and protect the old large pear trees ( Hochstammbäume )that are been replaced more and more with short ones for easier maintenance and picking. Wildlife, specially birds need the large trees as a living space. And they make the landscape more beautiful and divers.
AND because one good cause doesn't seem to make the cut anymore these days.
The profits also are going into a foundation to help Families that are financially tight.
